Crawfish Etoufee – Our family favorite
1 lb crawfish tails
2 stick butter or margarine
1 med onion (chopped fine)
1/2 bell pepper (chopped fine)
1 c celery (chopped as desired but I like mine fine)
1 small pod garlic
1/2 -1 T flour
green onion tops, parsley (if desired), cayenne pepper, salt,
Baker Farms Gourmet Pepper Sauce
Melt butter, add onions, bell pepper, garlic, and celery. Cook until tender. Add a cup of water and continue to cook for 15 to 20 minutes. (More water may be added if needed) After vegetables are very tender add 1/2 to 1 T flour (Our rice flour can be used) and more water. Now add salt and pepper to taste. Cook another 10 minutes. Should be like a soup. Add crawfish, onion tops and parsley. Cook another 10 minutes.
Serve over Baker Farms Popcorn Rice.
Campbell Farms Rice Bread
1 cup Campbell Farms rice flour
1 cup all purpose flour
1/4 cup vegetable oil
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg, well beaten
Heat oven to 325 degrees. Spray loaf pan with nonstick cooking spray. Combine dry ingredients. Add milk and egg. Mix until well blended. Add vegetable oil and mix well. Pour into pan. Bake for 30 minutes or until toothpick inserted in center comes out clean.
Popcorn Rice Pudding
3 eggs, beaten
2/3 cup sugar
1/4 teaspoon salt
3 cups milk, scalded
1/4 cup butter
2 cups cooked Campbell Farms rice
3/4 cup raisins
1 tsp. vanilla
1/8 tsp. cinnamon, 1/8 tsp. nutmeg
Beat eggs until frothy. Beat sugar and salt into eggs until creamy. Add scalded milk. Add butter, rice, raisins, vanilla, cinnamon, and nutmeg. Mix well. Pour into buttered casserole dish. Place in a dish filled with 1 inch of water. Bake at 325 degrees for 1 1/2 hours.
Asparagus Rice Casserole
2 cans asparagus
1 cup butter
1 onion, minced
2 cloves garlic, minced
1 can cream of chicken soup
1 can cream of mushroom soup
1 chicken bouillon cube
1/4 cup evaporated milk
8 oz. white chedder cheese
1/8 tsp. thyme
Season with salt and pepper to taste 2 to 3 cups cooked Campbell Farms popcorn rice. Saute onion and garlic in butter. Add soups, bouillon cube, and milk. Mix well. Melt cheese in soup mixture. Add seasonings and mix well. Stir rice into mixture. Gently stir asparagus into mixture. Spoon into a casserole dish and brown in a 350 degree oven.
Aromatic Rice Dressing
2 to 3 cups cooked Campbell Farms aromatic rice
1 lb. ground beef or pork
1 pkg. dry onion soup mix
2 beef bouillon cubes
1 can cream of mushroom soup
1 jar mushrooms
1 cup butter
Brown meat with onion soup mix. Drain meat well. Add bouillon cubes, mushroom soup and mushrooms. Mix rice with butter and then stir into meat. Bake uncovered at 350 degrees until brown.
Rice Cooked in the Microwave
To make 4 servings of cooked rice, use:
1 cup of rice
2 cups of water
Salt (to your taste)
Butter (optional, to your taste, but no more than 1 tablespoon
1 teaspoon of olive oil (optional)
Combine rice, water, olive oil and butter (optional) in a microwave-safe glass bowl. Cover with microwave-safe lid and cook on HIGH – full power for 8 minutes. The lid can be vented (have small holes).
Cook again, but set your microwave to MEDIUM (50% power) for 12 minutes. Remove from microwave. Let stand covered 5 minutes or until water is absorbed. Fluff with fork and serve.
If you want firmer rice, cook at 50% power for 10 minutes instead of 12 minutes and for softer rice cook at 50% power for 15 minutes. Also, if you feel that your rice is dried out or not cooked sufficiently, you can increase the amount of water from 2 cups to 2 ¼ cups.
If you want to cook only 2 servings of rice use the following:
½ cup of rice
1 cup of water
Salt, butter, olive oil
Cook on HIGH – full power for 5 minutes.. Cook again at MEDIUM (50% power) for 10-12 minutes.
Note: I do not add butter or olive oil and do not open the lid anytime during cooking as your rice will be crunchy.

White Gravy
2 T butter
2 T Baker Farm Rice Flour
1/4 t salt
Dash of black or red pepper or to taste (I use both)
1 c milk
Melt butter in a sauce pan over low heat. Add Baker Farm Rice flour and blend. Add salt and pepper. Add milk all at once. Cook quickly while stirring constantly. Mixture will bubble and thicken. Enjoy over chicken fried steak, chicken tender dip, or over sliced boiled eggs.
